Description
A cozy, creamy jalapeño soup topped with crispy beef and cheddar rich, comforting, and perfectly spiced.
Ingredients
2 tbsp butter
1 medium onion, finely chopped
2 jalapeños, deseeded and diced
3 cloves garlic, minced
3 tbsp all-purpose flour (or gluten-free alternative)
4 cups vegetable or chicken broth
1 cup heavy cream (or half-and-half)
1 cup milk
1 cup shredded cheddar cheese
½ tsp ground cumin
½ tsp smoked paprika
½ tsp salt
2 tbsp fresh cilantro for garnish
Crispy cooked beef for topping
Instructions
1. In a large pot, melt butter and cook onions until translucent.
2. Add jalapeños and garlic; sauté until fragrant.
3. Sprinkle in flour and cook for one minute.
4. Gradually whisk in broth, stirring to prevent lumps.
5. Add cumin, smoked paprika, and salt; simmer 10–15 minutes.
6. Blend until smooth, then return to pot.
7. Stir in cream, milk, and cheese; simmer gently 5 minutes.
8. Serve warm topped with crispy beef and cilantro.
Notes
For a lighter version, use half-and-half instead of cream.
Adjust heat by adding more or fewer jalapeños.
Freeze portions in airtight containers for up to 2 months.
