Description
A high-protein, flourless cottage cheese bread made with rolled oats, flax seed, and pantry staples. Moist, tender, and perfect for toast or sandwiches.
Ingredients
1 cup cottage cheese (strained)
1½ cups rolled oats
5 medium eggs, or 4 large eggs
1 tbsp ground flax seed
1 tbsp olive oil
1 tsp baking powder
½ tsp salt
Optional: garlic powder, herbs, or cheese
Instructions
1. Preheat oven to 350°F (175°C). Line or grease a 9×5-inch loaf pan.
2. Strain cottage cheese using a fine mesh sieve or paper towel.
3. Add all ingredients to a blender: strained cottage cheese, oats, eggs, flax, oil, baking powder, salt.
4. Blend until smooth but slightly textured. Let batter rest for 5–10 minutes.
5. Pour into the prepared loaf pan and smooth the top.
6. Bake for 35–40 minutes or until golden brown and firm.
7. Let cool completely before slicing.
Notes
Letting the batter rest before baking helps the oats soften and bind.
For a savory twist, mix in chives or garlic powder.
Use parchment paper for easier removal and cleaner edges.
